Do you like stuffed peppers? You have to try Inside Out Stuffed Peppers. I found this recipe in Goosebury Patch cookbook- Slow Cookers,Casseroles & Skillets
Here is the recipe:
1 green pepper,top removed
1 lb ground beef
1 onion chopped
1-1/2 cup cooked rice
8 oz tomato sauce
salt and pepper to taste
Bring a saucepan of salted water to a boil. Add green pepper and cook 8 to 10 minutes until tender. Drain. cool slightly and slice peppers into strips. Meanwhile, cook beef and onion in a skillet over medium heat, stirring often until beef is browned and onion is translucent. Drain,add green pepper and cooked rice to skillet. Pour tomato sauce over skillet mixture, stir and heat through. Add salt to pepper to taste. Serves 4.
Extra notes: I use minute rice I make 2 cups of rice and use 2 cans of tomato sauce.
I really enjoy this recipe. I hope you try to make it and add it as a family favorite onto your menus.

This sounds yummy. Although I would ahve to try it when my husband isn’t around.
this looks like a great dinner for busy (or tired!) days. Especially good when peppers go on sale
